The Clos des Renardes vineyard is a recent addition to Fanny Sabre's estate. 100% pinot noir grown over clay and limestone soils. The grapes spend five days macerating in steel tanks before fermenting and ageing in old oak barrels - some details that spell Freshness with a capital F and Purity with a capital P. Bright flavours of red cherry, ripe strawberry with undergrowth and nutmeg spice in tow. The tannic structure is present but soft, almost suede-like; a lithe and mesmerising wine. Oh my.
