A very special savignin from exciting new generation winemaker Francois Rousset-Martin, named for his father who still owns the vineyard from where these grapes are cultivated.
This Savagnin would have been accepted as a Château Chalon if it was aged sous voile for six years, however as it's matured in topped-up barrels for 14 to 16 months, it’s a Côtes du Jura.
Umami characteristics shine, brioche, sherry and a smokey finish.A zip of acidity. Flowers blossom on the nose with a hint of almond.
Plenty of aging potential here, but excellent today too.
