Often these experiments make it into our single variety or single vineyard wines. We then blend a portion of all the different experimental wines into one whacky blend, this is what has come to be known as Tom wine. The beauty of this wine is that it's different every vintage. This year the Tom wine is whole bunch sauvignon blanc, full carbonic syrah, and shiraz rose that has been fermented on chardonnay skins.
