This syrah is a tribute to the time the Hills were a bit wilder. From the Ngeringa farm in Mt Barker, whole-bunch fermented for a short period before basket pressing into old French puncheons. Racked and bottled after six months to maintain freshness and liveliness. Not South Australian shiraz as you know it. Medium-bodied, earthy and spicy, with incessant drinkability. Reminiscent of a rustic French village wine. So, so good.
