It teeters into the walnut paste zone, yeasty and savoury, but still holds a blisteringly fresh line of lemony acidity shot through grapey and appley tanginess. All good. Lots of chewy, skinsy texture, bright flavours with that savouriness an undertow and final beat. You’ll drink this freezing cold and be delighted anyway.
