Crunchy, vibrant red wine made up of 2 different vintages, bringing out the best from both. Jilly Wines’ Bolivia is named after the small town of Bolivia in the New England region of NSW. The town is close to Ken Hutchison’s vineyard, where the grapes are grown organically. 40% Cabernet Sauvignon, 40% Shiraz and 20% Merlot. The 2019 fruit produced a grippy, darker liquid, so Jared picked the 2020 fruit early and essentially made a white wine in 2020. In combining the 2 vintages, he created this lip-smacking, juicy red.
