We rarely come access a spirit with such an unconventional process! A real family project here with Paul growing certified biodynamic sugar cane on their family farm in Redridge QLD and and his son Rob being the mastermind (and still builder) behind this wonderful gin.
Lantana Gin starts its life out basically as a sugar wine of sorts, using indigenous yeast and spontaneous fermentation of crushed sugarcane, a sugar wine is produced which is then distilled in the the either into agricole Rhum or the little bottle of gin you see before you. Using juniper, finger lime and, amazingly, Lantana (well known for being a pest in Australia) as the predominate botanicals this unique gin is bright, fresh with an all to enticing floral hit. She certainly is brimming with personality!
