Inspired by blends of this ilk from Cheverny in the Touraine, Loire Valley, though wholly Australian and as an interpretation by former sommelier turned wine importer/distributor Tim Stock. There’s some time on lees, some resting in barrel, the wine takes on more complexity than one would expect and the years since harvest have been kind. Preserved lemon, ginger, almond and alpine herb characters are in play. It’s got lightly creamy texture with a chalky, dry finish. It’s a beautiful wine, all up.
