From The Apple Farm, which is somewhere in Mount Gambier. Hand raised grapes the organic way. By Dr Kyatt Dixon. Naturally fermented, no additions, no sulphur. Sees a touch of skin fermentation too.
The variety is used as a platform for making a complex, intense expression with huge, saline mineral core. There’s preserved lemon, ginger, quince and fern leaf characters here, palate and bouquet agree on that. A pleasingly bitter, almost quinine like character in the mix too. Powdery/chalky texture the final punctuation mark, though its somewhat juicier before. A powerful, extremely refreshing expression here. Air in your hair. - The Wine Front
