All fruit from Freeman Vineyards in Prunevale, Hilltops region. 100% de-stemmed and cold soaked (this gently extracts some guts for the wine) on skins for 24 hours. Then pressed to 65% yield. 30% fermented in new French oak barriques (who can't resist a little charred wood) and the rest fermented in stainless steel. Deliberate juice oxidation before fermentation. Natural ferments on hard lees (this helps with texture) and aged for 10 months before bottling. Both parcels went through malo-lactic fermentation (that gives the buttery feel). No fining or filtration and minimal use of preservative (sulphur dioxide) added as PMS.
Big, loud and proud. Full of texture with musk, melon, summer fruits and a handful of warmth. - Mallaluka
