Some of you may or may not know, but Chenin Blanc as a grape variety ripens unevenly within the bunch. It is often what can be attributed to the different complexities in wines made from this grape.
What Annie & James Milton do however is multiple different picks, a pick for acidity, a pick for fruit flavour, a pick for ripe sugars. They ferment separately, after 9 months on lees in large format oak they blend back into stainless before bottling. So much effort!
What you need to know: golden fruit, apples and pears, satisfying oak, deep richness with balanced vibrancy. Yum!
