Not reinventing the wheel here, but doing pet nat prosecco is kinda cool from our mate Neil Prentice, the sybarite winemaker and all round crazy cat from Gippsland, Victoria. Free spirit Neil has been thinking out of the box since he was in nappies, and has applied his creative vision to this unconventional but wildly delicious expression of Prosecco. It’s hazy like cloudy apple juice in the glass, offers a bouquet of nougat, buttered toast and green apple to sniff on. Flavours are fresh, green apple-y, citrusy, a little nutty and salty. It’s got lots of charisma and super high drinkability. A winner. And a great rendition of the party staple.
