One of Georgia's most seminal producers and head of the Georgian arm of Slow Food, Ramaz Nikoladze takes a no-compromise approach to everything in the vineyard in the cellar. Farming with no chemicals whatsoever, no commercial yeast, no fining, no filtering, no sulfur. Straight tsolikouri, cloudy and hazy gold. Scents of orange peel, lemon balm, ginger, lemon barley, sugar water. Tangy in the palate, zing of sherbet acidity, savoury and faintly nutty. Very tight, very strict, complex and firm. Peaky acidity lifts and zig zags. Good drinking now, but give it time for maximum pleasure.
