Where you might expect Amontillado to veer into syrupy OTT territory, this is a more energetic and dynamic take on the theme. Richer and lengthier than the Fino, of course, packed with flor characters, candied nuts and a mighty pleasant crunchy texture. The finish stays true and clean, with a sort of browned green apple tone. Pass the cheese, please.
Apera Amontillado from Beechworth's very own Pennyweight winery. Spending an average of eight years in the solera, its full dry and downright nutty. Thanks Woody!
