Grown in soil which is a complex mix of clay, gravel and quartz on schist this wine is made in a way which respects the traditions Sylvestre and Joseph's father René established with their iconic Mosse Anjou Rouge (the first Mosse wine we drank). The destemmed grapes were macerated for 10 days with no punchdown so only the most gentle extraction and almost an infusion from the released juices. After pressing the wine was aged for 10 months in a old wooden barrels, with the \"jus de goutte and pressed juice separated. The wine spent 10 months aging before blending before bottling in June 2025. The Mosses' tasting notes translate as \"Intense and fresh nose, cocoa, olives and blackcurrant. Lively and aromatic attack with fruity and smoky flavors, redcurrants, black olives.
