This ferment has been ticking over for 3.5+ years. Made up of all organic beetroot, turnip, carrot and celery with added cumin and nigella seeds for fragrance and has been finished with some garlic oil. It’s earthy, and tart with intense flavour/colour. I like to serve it alongside seared venison or wallaby, but it’s also delicious drizzled over roasted vegetables, spread on a sandwich, mixed w chickpeas for a luminous hummus or added to braises and/or soups for complexity. - Adam James
