Sassafras perplexes us at P&V year in and year out, to how they also manage to be so consistent in the pet nat department. One of the hardest wine styles to be consistent in due to the unpredictable nature of any fermentation during it's main ferment. But yet they always seem to get the best out of this coming together of the Jura varietals. Unlike a lot of pet nats, this one seems to have a perfect balance of richness and creaminess but still have an intense acidic backbone. Every time we open this bottle, it's always a fight for the last glass!
