Organic chardonnay handpicked early to retain natural acidity. Its foot stomped and left on skins for a couple of days. Then pressed and racked to two seven-year-old French puncheons to barrel ferment. Racked and bottled with no additions.
James reckons it has lemongrass, ginger spice and subtle nuttiness. For us its got that fragrant apple skin with a little funk to make it super smashable.
