Winemaker Steve does a stella job of growing the most succulent grapes, considered blending and extensive resting (almost 6 years !) to create this fizzy (which is almost 50/50) chardonnay and pinot. The most beautiful, elegant, rich and textured tassie sparkling that'll give old champers a run for its money.
All of the creamy brioche flavours you would expect from an old school style traditional sparkling, this is a bottle to pair with oysters, perhaps petit fours ? Truthfully, any flavour of celebration / commiseration is acceptable.
