In 2014 Thomas came to the Jura to complete his training in BTS Organic Viticulture and Oenology and, like so many people, fell in love with the area and decided to stay. He had already worked for some of the great Beaujolais producers such as Julie Balagny, Guignier Michel and Jean-Claude Lapalu. All three in farm organically, with nothing added in the cave which is where Thomas’ beliefs lie. A short stint of teachings by Jura stars Pierre Overnoy and Emmanuel Houillon just confirmed this. He settled in the beautiful town of Mesnay and set up his small winery with a view to working a neat 3 hectares of vines in time.
"From a small plot in Pupillin facing south west up near the town, this field blend is made up of Ploussard, Pinot, Chardonnay and Savagnin. Full de-stem and wild fermentation and 2 months maceration in stainless steel. Basket press then sits in old barrels and bottled before the next vintage. No fining and filtration and no sulphur at any time." - GM Imports
