The Col is a blend of 43% pinot noir, 29% auxerrois, 22% chardonnay, with a 6% splash of pinot meunier. Although these are varieties you'll find in champagne, this is made in and named after the italian method Col Fondo. Also known as the ancestral method, the grapes are fermented separately in a variety of vessels including a Georgian qvevri, then blended and bottled for the second fermentation.
