Turning unwanted smoke tainted grapes into a range of incredible beers...... only the likes of Topher Boehm of Wildflower Bering in Marrickville and Bryan Martin of Ravensworth Wines Murrumbateman are the two to make this dream come true! Working on the idea that smokiness isn't an unwanted or unlooked for flavour in a viariety of food and drink (Islay whisky anyone??!!) the project was born.
Some things in life are bad, they can really make you mad
Other things just make you swear and curse
When you're chewing on life's gristle
Don't grumble, give a whistle
And this'll help things turn out for the best
And..........Always look on the bright side of life
Wildflower Bright Side: Gamay – Pale, hazy ruby colour. Complex perfume combining old campfire, raspberry, caraway seeds, exotic spice. Starburst of flavour, sour cherries, smoky spice, strong, pleasing bitterness through the finish with lingering, palate staining light, peaty characters. Around all this, a very refreshing, sour tang and brightness. The most smoke influenced, but retains the zest and charm of wild ferment, sour beer. - The Wine Front
