Vincotto translates to 'cooked wine' which is pretty much what this is from winemaker Tim Ward. He's reduced down his lambrusco red wine into an unctuous, sticky textured 'paste' full of sweet, red berry fruit characters and lashings of exotic spice. Vincotto is generally used where balsamic vinegar is, so you can make salad dressings, de-glaze your dishes or, better yet, drizzle over fruit and ice-cream/dairy desserts. You can do that, or make a vibrant, summery drink when you add a splash to soda water. YUM.
