Throughout a career that has spanned more than two decades, Tim Stock has made significant and lasting impressions in the industry. The award-winning sommelier first turned heads for his innovation in the restaurant landscape, before switching things up to focus on importing and distribution through his Vinous wines portfolio. Through Vinous, Tim has been responsible for introducing Australia to intriguing local wines alongside high-end and rare imports. He’s also THE importer of Georgian wines with a singular focus on the resurgent natural winemakers of that remarkable wine-growing country.
Meanwhile, Tim has been making wine in his ‘off season’ for over a decade. Les Fruits is the realisation of this ambition and hard work – it's a South Australian collection of natural wines, hand-shaped by Tim in the Adelaide Hills, that are unnervingly fresh, playful and frisky.
For the first time ever, Tim has made an 'up-for-it' pet nat called Chou Chou. It's a bloody dream and hits the mark with a bang. Cassie is a bright, exciting chardonnay that's cool and reserved, lightly saline, just a splash of green apple, a whiff of floral things. Collines ('Hills') does a beautiful job of highlighting the purity, freshness and finesse of chardonnay from the upper reaches of the Adelaide Hills. What a stunner. Peu de Peau is an orange wine of great personalty and freshness. Voix de Raisins, is just as playful as the name suggests and a winter rosé if ever we saw one – light and fresh but hitting that savoury spot nicely. All these wines express vitality, purity of fruit and general high drinkability. These are just REALLY good wines, is the message. Enjoy and drink with gusto!
