Based in the village of Rotalier in Jura’s south, ‘Fanfan’ Ganevat is one of Jura’s most charismatic winemakers. Fanfan comes from a long line of vignerons that dates back to the mid 17th century, though fascinatingly the family had supplemented grape growing with dairy endeavours until the mid-1970s.
100% Savagnin, from old vines planted on a terroir of Lias-period marls , harvested by hand. Vinification is done naturally: very short maceration, transfer into oak barrels for fermentation and a maturation of five years.
