Andy Ainsworth cut his teeth working in top flight bars with a natural wine bent. He's done his time travelling the globe looking at wine culture and immersing himself in the work of wineries. Ipso, with a move to regional Victoria, he was drawn into the idea of having a crack at the craft himself. This wine is inspired by Andy's delight in producers like Clos Cibonne, Chateau Simone and Tour du Bon - distinct rose wines emerge from these winemakers, with oxidative characters a feature. 

This is 100% cabernet sauvignon sourced from the famed Shay's Flat section of the organic Chapoutier Vineyard in Pyrenees, Victoria. This is the third release of this wine and this vintage is a little more unctuous in style. It's a blend of barrel and amphora fermented cabernet sauvignon. "Enjoy with salt cured anchovies on a warm afternoon preferably underneath a tree" says Andy.
