Cas Al Mat Intro Timorasso 2021

Cas'Al'Mat is a fresh project by two friends, Matteo, a winemaker and Alessio, a native of Varazze, and both are invested in this wine project located in the Tortona hills of Piedmont. They are a small operation producing vivid, bright, delicious wines, with a focus on the local grape variety of timorasso. This wine is fermented on skins for about 36 hours before being pressed off and matured in stainless steel tanks. The wine is thirst-quenching and zesty, yet shows nuance of almond savouriness and a briny, almost salty acid profile at the core. Citrus, tart stone fruit, ginger and light honeyed elements also appear. It's a wonderful, easy drinking yet quietly complex style.
