Chicago’s first distillery to open since the mid 1800s, Koval does things a little differently, their modus operandi is grain-to-bottle using only organic grain, grown by local farmers, to make their base spirit from scratch and barrels using wood from organically grown trees.
A deep brassy colour their bourbon whiskey has a mash bill of 51% corn and surprisingly 49% millet (a grass grain originating from Africa), the addition of millet makes this drinking experience truly unique. Medium sweetness, tannin and peachesk stone fruits lead to maple syrup, tobacco and subtle spice. Subtle but tons of personality creeping through.
