Two day cold soak, followed by fermentation on skins of between 8 and 20 days to build complexity, gentle punch-downs twice a day to extract the amazing character of the thick skins without extracting too much tannin, before being pressed off into barrel for a total of 37 days of fermentation with lees stirring twice weekly to increase complexity and mouthfeel. Following fermentation the wine was moved to tank to retain freshness and those wonderful citrus and floral aromas. Bottled unfined and unfiltered. - Municipal Wines
