Ah the PIG as this variety is affectionately known inside the winery. A blend of around 60% barrel fermented and 40% tank, all on gross lees until bottling. Sourced from the certified organic Lansdowne Vineyard. Soft pale straw colour. The nose has good intensity but as desired has a kind of fruit neutrality like the best northern Italian examples. That said you can see the fresh pear and apple notes along with dried white and yellow flowers and a hint of dairy thanks to the lees aging in the barrel
component. The palate is really where the style diverges from commercial examples as the texture and savoury flavours such as honeycomb and dairy eclipse the fruit expression. Long cream and toffee apple flavours on the finish. Not your average Aussie Grigio. - Winemaker Tim Stock
