Like many a distillery in Australian, Chanel and Sally of Birds of Isle are looking to change the way Australians think about and drink rum..... Bundy and Cola and shots of Captain Morgans... we have all been there.
For their first release the duo have created an elegant yet complex sipping rum though blending a selection of 2-8 year old Venezuelan rums which, after blending, were finished off in ex Barossa muscat barrels before. However it doesn't end there, the pièce de résistance for this rum is the addition of Bunya nuts, grown locally on Bundjalung Country and hand foraged , the shells are removed and flame-torched, oven-roasted and both are macerated in the rum. The result is a light and dry rum, burnt sugar, vanilla, creme brulee, roasted nuts with a gentle smoke. A try job to behold.
