The onions used here have their own geographic designation, Roscoff, which, like Champagne, makes them VERY FANCY. That these bad boys are WILDLY DELICIOUS, requiring a CAPS lock moment, is a huge factor for us enjoying them by the fistful. We recommend huge tankards of brown beer alongside.
