Champagne Olivier Horiot Metisse Blancs et Noirs Extra Brut NV

From the town of Les Riceys in the southernmost part of Champagne, Oliver Horiot and his wife Marie exercise organic and some biodynamic practices. Whilst they’re not certified, they do this to be more terroir-focused.

A powerful blend of 80% Pinot noir, 20% Pinot blanc. Base year is 2019 of which has spent 15 months in Oak barriques plus the addition of 20% reserve wine. Disgorged February 2023.

Very much on the ripe side, with a little oxidation, yellow orchard fruit and cinnamon dust. The palate remains uber dry and mouth puckeringly good... showcasing the chalky minerality of the aforementioned terroir.
