Based in the Nara basin the Chiyo Shuzo brewery goes back to 1873. At the foot of the Shinomine mountain range, the cool climate and pure mountain water is ideal for premium sake production.
The Shinomine Yamahai from Chiyo Shuzo is made with Omachi rice polished to 77% remaining. Yamahai is a traditional style of fermentation starter. This shows wonderful texture and complexity. A hunt of fruitiness with a round soft mouthfeel.
Handling: Once opened the Chiyo Shuzo 'Shinomine Yamahai' will last well for at least 6 - 8 weeks, ideally in a refrigerator.
