Ciderie du Vulcain have made an extra special cider this year, using the Tobiässler apple. WTF is a Tobiässler apple ? Glad you asked ! Originally from Switzerland, it's one of those super cute apples that's green AND red. Crisp and firm and pretty damn acidic, which = perfect for cider. It's kinda spicy - cardamom, cloves, saffron - plus a honey-blossom florality. Demi sec means it's a touch sweet, but really, it's a breath-taking balance of sweet/sour/bitter.
The kind of cider to drink like fine wine, sip contemplatively, and pair with porchetta or cured meats.
