Planted at 350 metres on stony limestone soils, this special single site is harvested by hand in mid-September. After gentle destemming, the grapes undergo an overnight cold maceration before the free-run juice is fermented in stainless steel over 12 days at 16°C.
The result is a pecorino with stunning fruit purity, a rich body and great texture – elements that are energised and tightened by pecorino’s trademark acidity. It is a perfect counterpoint to the leaner, cooler, “mountain style” pecorino of Tiberio, strengthening our understanding of this unique grape variety and two of its heritage terroirs.
