Domaine Macle Cote du Jura Chardonnay Sous Voile 2018

*RARE BIRD ALERT* Not a whole lot of Château-Chalon makes its way into Australia, let alone from an estate like Domaine Macle, which has mastered the art of oxidative winemaking. Chardonnay planted on limestone soils from vines a half-century old, then aged under flor for between two and three years. Think of it as baby vin jaune. Yeasty and expressive, with talc-like texture, sharp acidity and all the complexity you would expect. Sherry-esque and saline, rich with grilled nuts, peat and sea spray character. Long lunch material in a big way.
