Vino Cotto is a sweeter style of wine, where the initial must (grape juice) is heated and reduced, a.k.a cooked. Then fresh must (grape juice) is added to kick off fermentation. The vino cotto is typically aged in barrel for long periods of time and topped up using cooked must from other vintages. Fiore San Biagio is located in Controguerra, on the Colline Teramane, on the border between Abruzzo and Marche. The vines sit on hills 300m above sea level, between the Adriatic Ocean and Appenine mountains. This blend is malvasia and montepulciano.
Deep and sweet, perfect for blue cheese, cookies and dare we say, chocolate!
It also makes an excellent drizzle over vanilla gelato or poached pears, or can be used sparingly to enrich sauces and reductions for duck or pork.
