Holly's Garden Uber Brut NV

The pinot noir is direct pressed, the chardonnay joins in all clear and fresh. The lot is fermented between barrels and stainless steel tanks, a solera of older wine material is blended in to lend complexity. It’s quite amazing that this wine has been made continuously since 2007 (!), a wilder take on sparkling wine with crisp, green apple fruit married to salted cashew, toasty notes and brioche complexity. The savouriness is key, and a brilliant feature. We love this wine.
