Organically grown grapes of a red varietal were taken from Tamburlaine as cuttings in the late 1980s, the identity of which was lost and forgotten throughout the years. They were planted on an already cleared hobby farm just off the ring track in Mt Kembla, where they have never been sprayed with anything. Whole bunches were thrown into the fermenter and sealed for a carbonic maceration for one week. Then hand basket-pressed into the tank, the juice tasted quite bitter and green, so I added leftover lees from all the wines bottled throughout the year to smooth things over. - Hamish, winemaker
Campari meets bergamot tea with gingery notes and a blistering crackle of citrusy freshness. Chalky texture in a juicy slosh. Just delightful! Interesting! Cool!
