From Crete, farmed organically, produced with minimal intervention. Left on lees, taken from old oak to bottle. 

Attractive scents of sandalwood, nougat, vanilla wafer with preserved lemon, fresh lime on green apple, some sea spray notes. The palate is refreshing, super citrusy, licked at with nougat and vanilla cream, some flint and slate notes. Quite a bit of flavour here but still so vividly brisk and fresh.
