Chicago’s first distillery to open since the mid 1800s, Koval does things a little differently, their modus operandi is grain-to-bottle using only organic grain, grown by local farmers, to make their base spirit from scratch and barrels using wood from organically grown trees.
The only whiskey made from 100% millet, a grass grain which is naturally gluten free and predominantly used across Asia and Africa because of its drought resistant properties. Medium in body, notes of vanilla, toasted caramel, all spice, star anise and pine resin. Similar drinking to rye whiskey with a hint of fresh mint and eucalyptus.
