Koval Single Barrel Rye Whiskey

Chicago’s first distillery to open since the mid 1800s, Koval does things a little differently, their modus operandi is grain-to-bottle using only organic grain, grown by local farmers, to make their base spirit from scratch and barrels using wood from organically grown trees.

Both unusual but completely delightful this whiskey is made from 100% rye, light copper in colour and surprisingly restrained in hot spice it dances across the palate with notes of ginger, spice, white pepper Christmas cake and candied citrus. Only the heart cut of the distillate is use resulting in an elegant and floral forward dram. We are always sorry to realise when our glass empty!
