Half and half pinot noir and chardonnay. Spends 64 months on lees, with 2015 around 80% of the blend. There is 20% reserve wines involved. Biodynamic/organic farmed. Local oak is used for barrels.

Brilliant sparkling wine with laser-like focus and ultra-high refreshment factor. So dry and fresh, strong, strong mineral currency with green apple, lemon sorbet, pink grapefruit the notes that comes to mind. Tight and vigorously fizzy with superb length and poise.
