LS Merchants Chenin Blanc 2024

When building our chenin blanc, winemaker Dylan opts to create different blocks of wine. This is done by picking grapes at different stages of ripeness, from various locations, then fermenting and aging small portions of the wine in different vessels. 

Our favourite toy in the winery got a workout here - an 1800L Slovenian Foudre saw some of the juice through ferment. Add to that some wild ferment in new oak barriques, a little touch of skin contact sans plunging followed by maturation in old puncheons, wild ferment in stainless steel. Each small portion adds a new building block, eventually creating a wine rich with complexity. 

Yellow stone fruits,  nectarine skins, lifted spice and honeysuckle. Bold, tropical fruit meets tight citrus acidity. Matches up really well with any medium-full flavour foods, cheese, white proteins and good times. - LS Merchants
