Our Mem has made a bloody gorgeous array of wines this vintage. Carry The One is made from 100% chenin from Wiradjuri Land (Gundagi), these grapes grown on ironstone-rich volcanic soils, with warm days and cool nights perfect for a rich yet lean style of this voluptous variety.
Her first time working with chenin, Mem (never one to do things by halves) has processed the grapes in three different ways. 1/3 direct pressed to stainless, 1/3 on skins for three days and then transferred to concrete egg and 1/3 on skins for 10 days and then transferred to Austrian hogshead. The wine is then blended the wine back together. The result is a textural, deep and complex expression of chenin.
