Philippe Chatillon Vinaigre Vin de Paille 375ml

The most incredible red wine vinegar from one of Jura's most singular winemakers.

This vinegar starts it's life as a Vin de Pailles or 'Straw Wine' where grapes are left out to partially dry in the sun, concentrating their flavour and sugar content. The resulting juice is then fermented into a sweet, concentrated dessert wine which - in this instance - has then undergone a secondary fermentation to create an incredibly complex and vibrant vinegar, with a perfect balance of sweet/sour and an underpinning of typical Jura-esque saline minerality. Unbelievable stuff.
