Winemaker Peta Kotz is making waves in the Hunter Valley with Sabi Wabi. Minimal intervention wines inspired by the ancient Japanese concept of Wabi Sabi - finding beauty amongst imperfection.
Sugi is skin fermented semillon. The wine has a powdery yet delicate tannin, a textual delight that shivers with sea spray, white flowers, lemon myrtle and stone fruit pithiness. Picked early to keep that fine boned acidity and freshness, this style will most likely make an appearance at any occasion. A keeper!
