Sebastian Van de Sype Ancestrale Lambrusco 2021

Located in the hills of the historic Lambrusco area of Castelvetro outside of Modena, our property of five hectares is carefully farmed with respect to nature and without the use of systemic chemicals. This Ancestrale aims to express our territory to it's maximum capacity. It is produced under the guidance and tutelage of Frank Cornelissen.  Using indigenous yeasts only, the fermentation process is finalised in the bottle, accompanied by 100% manual labour at every step of the way. - Sebastian Van de Sype
