The Hermit Ram Salty White 2022

Theo Coles has a whole big thing about finding saltiness in wines and getting that character involved. It’s sauvignon blanc and muller thurgau seeing 14 days on skins. Raised in amphora. No SO2. No salt added either. Salty white indeed! Scents of green herb, light floral notes, jasmine and some tropical fruit in there too. Juicy in the palate with tingly, saline acidity as the name promises.
